Nothing artsy today, but some serious baking. Somehow I really like baking cookies, cupcakes and muffins, but only if I have time to do so. I do not like rushing in the kitching like my mum always does. Baking should be relaxing, not stressing! So today I have time and so I decided to make muffins. I’ve been reluctant to bake some muffins as last time they turned out totaly wrong. The dough seemed to have risen, but when I bited the muffins they all had a giant air bubble inside and the dough around was soggy and heavy. Not a big succes, I can tell you. Today I found the courage to try again with these awesome apple and chocolate muffins.
Here’s the basic muffin recipe I used (12 muffins)
- 280 g flour
- 1 pinch of salt (I didn’t add this)
- 120 g sugar + 16 g vanilla sugar
- 2 eggs
- 250 ml milk
- 90g butter
I melted the butter and let it cool. Added the dry ingredients together. Added the wet ingredients together. Put the wet with the dry and most important, I didn’t stir too much.
I have a pan for 12 muffins that I prepped with cupcakecups. I added a layer of the mixture and some apple pieces to each cup and then some more batter. I finished them with more apple on top. I did the same for the chocholate muffins. I know people often mix the chocolate or apple in the batter, you can do that instead.
Now they go in the oven at 200°C. See how big they get? Cool!
